Fresh Blueberry Banana Bread

  • 1 cup blueberries
  • 1 3/4 cup flour
  • 2 tsp. baking powder
  • 1/4 tsp. baking soda
  • 1/2 tsp. salt
  • 1/3 cup margarine
  • 2/3 cup sugar
  • 2 eggs
  • 1 cup banana, mashed

Toss the washed and drained blueberries with 2 tablespoons of the flour. Sift the flour, baking powder, soda and salt together; set aside. Cream the margarine and gradually beat in the eggs, one at a time. Add the flour mixture alternately with the mashed banana, stirring until blended.

Stir in the blueberries. Baked in a greased loaf pan in a 350 oven for 50-60 minutes.

Makes 1 loaf.
