Hardy 3-Bean Bake

5 slices of bacon, cut into 1 inch pieces
2 large onions, cut in rings and then in half
3/4 tsp dry mustard
1/4 cup white vinegar
1/2 cup brown sugar
16 oz can green lima beans, drained and rinsed
16 oz can light red kidney beans, drained and rinsed
28 oz can pork and beans (don't drain)

Put bacon and onions in a large frying pan.
Fry just until the bacon is done, not crisp (don't drain).
Add mustard, vinegar, and brown sugar.  Simmer until the sugar dissolves.
Add the beans and combine well.
Put into a 2 quart casserole dish, cover and bake at 350 degrees for 45 minutes.

Serves 12-15.

Five Bean Bake

(serves 8)

  • 8 bacon slices, chopped
  • 1 large onion, diced
  • 1 can pork and beans
  • 1 can black beans, rinsed and drained
  • 1 can chickpeas, rinsed and drained
  • 1 can kidney beans, rinsed and drained
  • 1 can lima beans, rinsed and drained
  • 1 cup ketchup
  • 1/2 cup firmlly packed brown sugar
  • 1/2 cup water
  • 1/4 cup cider vinegar

Cook chopped bacon slices in a large skillet over medium high heat until crisp;
remove bacon, reserving 2 tbsp drippings in skillet.  Add diced onion, and saute
in hot drippings 5 minutes or until tender.

Combine bacon, onion, all beans, ketchup, brown sugar, 1/2 cup water,
and cider vinegar in a lightly greased 13 X 9 inch baking dish.

Bake, covered, at 350 for 1 hour; uncover and bake 30 more minutes.

Beefy Potato Casserole

  • 1 (22 ounce) package frozen mashed potatoes
  • 2 tbsp butter
  • 1 tsp salt, divided
  • 1 pound  lean ground beef
  • 1 small onion, chopped
  • 1/2 tsp seasoned pepper
  • 2 cups (8 ounces) shredded Cheddar cheese, divided
  • 1 (11 ounce) can whole kernel corn, drained
  • 1 (10 3/4 ounce) can cream of mushroom soup, undiluted
  • 1/2 cup milk
Prepare mashed potatoes according to package directions.  Stir in butter and 1/2 tsp salt; set aside.

Cook ground beef, onion, and seasoned pepper in a large skillet over medium high heat, stirring until beef crumbles and is no longer pink; drain and return to skillet.  Add 1 cup cheese, corn, soup, milk, and remaining 1/2 salt, stirring well.

Pour beef mixture into a lightly greased 13 X 9 inch baking dish. Spread mashed potatoes evenly over beef mixture.

Bake, covered, at 350 for 20 minutes; sprinkle with remaining 1 cup cheese and bake 10 more minutes.

Casseroles

New types to try out.

Tea Biscuits

  • 2 CUPS FLOUR
  • 4 TSP. BAKING POWDER
  • 1 TSP. SALT
  • 1/4 CUP BUTTER
  • 1 CUP MILK
Mix together dry ingredients.  Cut in butter and add milk slowly.  When mixed, flour board and knead a few minutes.  Roll out. Place on ungreased baking sheet. Bake thick 450 F for 12-15 minutes. Makes 15-18

Variations:

Cheese add 1/2 cup & decrease butter
WW flour add 1 cup & 1 cup flour
Raisins add 3/4 cup & decrease milk to 3/4
