Salsa
- 1 1/2
cups chopped tomato (1 large)
- 1/2 cup
chopped green
onion
- 1 can
chopped green
chilies
- 1 can
chopped ripe
olives
- 2 cloves
garlic, minced
- 2/3 cup
white vinegar
- 1/3 cup
vegetable oil
- 1 tbsp sugar
- 1/2 tsp
coarsely pepper
Combine first 5 ingredients in a medium bowl.
Combine vinegar and remaining 3 ingredients in a jar;
cover tightly, and shake vigorously. Pour vinegar mixture over
vegetable mixture. Cover and chill at least 3 hours.
Drain salsa, if desired, and serve with tortilla chips
Yield 3 cups.
Salsa Cruda
- 3
large tomatos
- 1/2 cup
chopped green
onion
- 4 green
onions, sliced
- 3 jalapeno
peppers, seeded and diced
- 1 cloves
garlic, minced
- 2 tbsp
purple onions, diced
- 3 tbsp
cilantro
- 1/2 tsp salt
- 2 tbsp lime
juice
Combine all ingredients, stir well. Cover and chill.
Serve with chicken or fish or dip with chips.
Yield 4 cups
