Corn and Sun Dried Tomato Quesadilla

1/4 tsp olive oil
2 corn tortillas
cooking spray
1/3 cup corn (frozen) and thawed
1 tbsp chopped red onion
1 1/2 tsp sun dried tomato
1/8 tsp salt
1/8 tsp pepper
1/4 cup shredded smoked mozzarella cheese


1. Pour oil onto one side of a tortilla.  Place second tortilla over oiled side of first tortilla,
and rub tortillas together to spread oil evenly over both.

2. Heat skillet to medium-high heat.  Coat pan with cooking spray.

3. Add corn; cook 4 minutes or until browned, stirring occassionally.  Place corn in a bowl.
Add onion, tomato, salt, and pepper to pan; saute 1 minute.  Add to the corn mixture.
Wipe pan and respray.

4. Heat to medium-high heat. place one tortilla, oiled side down, in pan.  Sprinkle with 2 tbsp.
cheese over tortilla; top with corn mixture.  Sprinkle with remaining 2 tbsp cheese, top with remaining
tortilla.  Cook 2 minutes each side.

5. Cut into wedges.
