Perfect Pot Roast


Step 1
4 lb beef cross rib
1/3 cup flour
3 tbsp oil

Step 2
1 ½ cup onion
¾ cup carrots
1 clove garlic
¾ cup celery

Step 3
1 cup tomatoes
½ tsp thyme
1 bay leaf
1 cup beef stock
4 green peppers
6 potatoes
 

1. Pat meat dry and poder with flour.  In dutch oven, heat oil at medium heat. Brown meat all over 7 min.  Remove.

2. Cook step 2; 3-5 minutes.  Sprinkle remaining flour 1 minutes.

3. Add Step 3.  Pour  in stock bring into simmer.  Place roast in cover.  Cook  low heat for 325 F  for 1  ¾ hour.

4. Add whole veggies and cook 45 – 75 min.

5. Turn roast every 30 min.  Remove roast from heat to make gravy.
