Crispy Chicken Stir-Fry


1/2 tsp. pepper
1 cup Bisquick
2 cups chopped uncooked chicken
2 eggs
1/4 cup oil
3 carrots
1 green pepper
1 onion
1 can (20 oz.) pineapple chunks

Mix: pepper and bisquick in large bag.  Stir chicken into eggs and remove.  Coat chicken with mix in bag.
Heat: oil in med.-high skillet. Stir-fry carrots 2 mins. add green pepper.  and cook for 2 min. Remove.
Stir-fry chicken until golden in hot oil.  Add veggies. Cook for 2 min. Stir in pineapple.
Makes 6-8 servings.
