Gingered Chicken Thighs


1 tbsp. oil
1/2 tsp. hot chilli powder
8 chicken thighs
2 cloves garlic
1/2 cup sweet and sour sauce
1 tbsp. soya sauce
2 tsp. ginger

1.  Heat oil in hot skillet.  Cook chicken, skin side down until brown. (4 min.)

2.  Reduce heat to low; turn over chicken.  cover and cook 15-18 min. until juices run clear.

3.  Spoon off fat.  Increase heat to med. Stir in garlic and cook 2 min. Combine sauces and ginger. Brush half over chicken and cook 5 min. and turn over brush again and cook 5 min. Sauce should thicken.  Pour sauce over chicken when serving.
