Tropical Pineapple Nog


1 pint low fat vanilla ice cream
1 can crushed pineapple
1/2 cup milk
1/2 tsp vanilla
1/4 tsp coconut extract
Shaved coconut, toasted
carambola (star fruit) slices


In a blender, combine ice cream to extract.
Cover and blend until smooth.
Serve at once.
Garnish with coconut and carambolas.

Makes 6 servings.
