Baked Denver Omelet

2 tbsp butter
1/2 cup chopped onion
1/2 cup chopped green pepper
1 cup chopped cooked ham
8 eggs
1/2 cup milk
1 cup grated cheddar cheese
salt and pepper

Directions
Melt butter in a small skillet.  Add onion and green pepper, cook until softened but not
browned.  Remove from heat, add ham.  Set aside.

In a bowl beat eggs and milk until light and fluffy.  Stir in the ham mixture and 1/2 cup of the
cheddar cheese.  Season with salt and pepper.

Pour into a greased 9 inch square or 10 inch round baking dish.  Sprinkle the remaining
1/2 cup of cheese over top.  Bake at 400 degrees F for 20-25 minutes, until golden brown.

Makes 4 to 6 servings.
