Greek Spinach Quiche 

 

Prepare pastry for pie.  Line the unpricked pastry shell with a double thickness of heavy duty foil.
Bake in a 450 degree oven for 5 minutes.  Remove foil.  (i left the bottom in for ease of getting out of pan).
Bake for 5 to 7 minutes more or till pastry is nearly done.  Remove from the oven.

Reduce oven temperature to 350.

Meanwhile, combine eggs and next 7 ingredients; stir with a wire whisk until blended.
Stir in spinach and feta cheese pour into pastry shell.  

Pour egg mixture into hot pastry shell.  Bake in the 35 minutes or till a knife inserted near the centre
comes out clean.  Serves 6.
