Quiche (Choose a Flavor)

 

     Pastry for single crust pie
     3 beaten eggs
     1 1/2 cups milk
     1/4 cup sliced green onions
     1/4 teaspoon salt
     1/8 teaspoon pepper
     3/4 cup chopped cooked chicken, crabmeat or ham
     1 1/2 cups shredded cheese (swiss, cheddar, monterey)
     1 tablespoon flour

Prepare pastry for pie.  Line the unpricked pastry shell with a double thickness of heavy duty foil.
Bake in a 450 degree oven for 5 minutes.  Remove foil.  (i left the bottom in for ease of getting out of pan).
Bake for 5 to 7 minutes more or till pastry is nearly done.  Remove from the oven.

Reduce oven temperature to 325.

Meanwhile, in a bowl stir together eggs, milk, onion, salt, pepper.  Stir in meat.  Toss together shredded cheese and flour.
Add to egg mixture, mix well.

Pour egg mixture into hot pastry shell.  Bake in the 325 degrees oven for 35 to 40 minutes or till a knife inserted near the centre
comes out clean.  Serves 6.
 

Quiche Lorraine


Prepare as above, except omit green onion and meat.  Cook about 6 slices bacon until crisp.  Drain, reserving 2 tablespoons
drippings.  Crumble bacon; set aside.  Cook one medium onion, sliced in drippings over heat under tender.  Add bacon, onion
and cheese to mixture.
 

Pizza Quiche

shell
3/4 cup swiss cheese
3/4 cup shredded mozza
1/2 cup pepperoni
1 green onion, chopped
3 large eggs, beaten
1 cup half and half
1/2 tsp salt
3/4 tsp dried oregano

Bake shell then add the rest. Bake at 325 for 45 mins.



Oil Pastry
 

     2 1/4 cups flour
     1/4 teaspoon salt
     1/2 cup cooking oil
     1/3 cup cold milk
 

In a mixing bowl stir together flour and salt.  Pour oil and milk into a measuring cup (do not stir); add all at once to
flour mixture.  Stir lightly with a fork.  Form into 2 balls; flatten slightly with hands.

Cut waxed paper into four 12 inch pieces.  Place each ball of dough between 2 sheets of paper.
Roll each bal lof dough into a circle to edges of paper.  (Dampen work surface with a little water to prevent
paper from slipping).

Peel off papers to fit into pie pan.
