Blueberry Muffins

1. Heat oven to 375 F.  In large mixer bowl, combine ½ cup sugar and the butter.  Beat at medium speed, scraping bowl often, until well mixed.  Add sour cream, orange jiuce concentrate, 2 tsp peel and the egg.  Continue beating, scraping bowl often, until well mixed.

2. In medium bowl, stir together flour and baking soda.  By hand, stir flour mixture into sour cream mixture just until moistened.  Fold in blueberries.  Spoon into greased muffin pan.

3. In small bowl, stir together 1 tbsp sugar and ½ tsp peel.  Sprinkle about ¼ tsp mixture on top of each muffin.  Bake for 20 to 25 min or until lightly browned.  Cool 5 min remove from pan.
