Good Morning Muffins

1/2 cup firmly packed brown sugar
1/4 cup marg softened
1 cup sour cream
2 eggs
1 cup shredded carrots
1/2 cup flaked coconut
1/2 cup raisins
1 1/2 cups flour
1 teaspoon baking soda
1 teaspoon cinnamon

1/2 dozen huge muffins

Heat oven to 375 degrees.
In large mixer bowl combine 1/2 cup sugar and butter.  Beat at medium
speed, scraping bowl often, until well mixed approx 1 to 2 minutes.  Add

sour cream, and egg.  Continue beating scraping bowl often, until well
mixed.
Add in flour and baking soda.  By hand, stir in carrot, coconut and
raisins.  Add the dry ingredients.
Spoon into greased muffin tins.

Stir topping together and pour over muffin.
Bake for 20 to 25 minutes or until lightly browned.
