Lemon and Poppy Seed Muffins


1. Preheat oven to 400 degrees.  Grease muffin tins.

2. In a large bowl, blend together flour, first part of sugar, powder, lemon zest, and the salt.  In a med. bowl, beat together the remaining 2 tbsp of sugar, egg, oil, 1 tbsp of poppy seeds, milk and lemon juice.  Combine the two mixtures, blending until the dry ingredients are just moistened.

3. Spoon the batter into the cups, filling about ¾ full.  Sprinkle the remaining poppy seeds over the top of the muffins.  Bake for 15 to 20 minutes.
