PINA COLADA PIE

1 PKG LEMON/VANILLA PUDDING

1 1/2 CUPS SOUR CREAM

3 TBSP. RUM *

2 TBSP. SUGAR

2 TBSP. MILK
-
1 TSP. GRATED LIME RIND

1 CAN CRUSHED PINEAPPLE

1 CUP COCOANUT

1 PIE SHELL
Combine pie filling. Mix sugar, cream, rum, sugar, milk and rind
in bowl. Beat at low speed until smooth 1 minute. Fold in pineapple
and cocoanut. Spoon into shell. Chill 3 hours. Garnish
with cool whip.
*Substitute 1/2 tsp. rum extract increasing milk to 1/4 cup.
Optional Fancy Glaze:
1 tbsp cornstarch
1 tbsp water
1 can crushed pineapple
1/4 cup sugar
2 tbsp lemon juice
