German Potato Salad
Serves 4
- 5 large red potatoes, unpeeled
- 4 slices bacon, chopped
- 1 bunch green onions, chopped
- 1 tbsp flour
- 2/3 cup water
- 1/4 cup cider vinegar
- 1 tsp salt
- 1 tsp pepper
Cook potatoes in boiling water
to cover 25 to 30 minutes or until tender; drain and cool.
Cut into thin wedges.
Saute bacon in a large skillet
over medium high heat 2 minutes. Add green onions, and sauté
2 minutes.
Stir in flour, and cook 1 minute,
stirring constantly. Gradually stir in 2/3 cup water and vinegar; cook,
stirring constantly, until thickened.
Stir in salt/pepper. Toss with potato wedges. Serve warm.
Yield 4 servings.
