Makes 6 to 8 servings
3 bacon slices, chopped
1 large onion, chopped
2 garlic cloves, minced
3 (16-oz) cans pinto beans
1/3 cup firmly packed brown sugar
1/3 cup molasses
1/3 cup ketchup
2 1/2 tbsp prepared mustard
1/2 medium size green bell pepper, chopped
Cook bacon slices in a large skillet until crisp; remove bacon, reserving drippings in pan.
Saute onion and garlic in reserved drippings until tender.
Combine bacon slices, onion mixture, beans and remaining ingredients in a slow cooker.
Cover and cook on high for 2 1/2 - 3 hours.
